Pancake Day

On pancake day, we like to have a three-course pancake meal. Yes, that means pancakes to start, pancakes for main and pancakes for pudding. Don’t knock it until you’ve read the recipes. It’s honestly DELICIOUS!
There are a range of pancakes you can buy and if you plan on doing the 3-course meal, it really does work well with a bit of cheating. Personally, I like to make the batter myself for the blini’s, use chilled savoury ready-made ones for the main course (they work the best) and then either home-made, very thin pancakes, or scotch pancakes for dessert.

Check out our Starter, Main & Pudding recipes below. You can also add Salsa and Guacamole to go with your Beef, Spinach & Ricotta Cannelloni pancakes. Yummy!

Beef & Spinach CannelloniPreheat the oven to 170C/180 degree’s fan/gas mark 5. Heat a little oil in a pan. Chop the onion and cook until tender. Add the beef (or alternatively chunky peppers and tomatoes for a vegetarian option) cooking for approximately 10 minutes until cooked through then drain any excess oil and fluid.
Boozy Fruity Cinnamon PancakesThis pancake recipe packs a boozy punch! But if you were looking for an alcohol-free version, a great alternative is to soak the fruit in ginger beer - it's just as tasty and although there's a lot of sugar, it's balanced with a lot of fruit.
Fool-Proof Pancake RecipeGrab a large bowl and put in the flour, eggs, milk, 1 tablespoon of oil and a pinch of salt then give it a good whisk until no lumps remain. Heat a little oil in a suitable sized pan over a medium heat – you want the oil hot hot HOT before you add the mixture.
Mixed Fruit, Lemon & Sugar PancakesAfter tantalising the tastebuds with all of that, the best thing to finish with is a light pancake pudding to cleanse the palette with a refreshing fresh fruit salad. At this point you can opt for shop-bought and go for something like a scotch pancake because they are nice and little – or – you can make lovely super-thin ones using the batter as detailed at the start of the recipe…
Pancake Blini’sThe perfect starter, or canape for a dinner party - tiny little pancake blini's with 5 toppings: Beetroot, Cream Cheese & Cress Smoked Cheddar & Pancetta Tomato, Mozzarella & Basil Cream Cheese & Chive with Salmon Cheesy Garlic & Mushrooms
Super Tasty & Super Simple GuacamoleThis recipe is super quick, super easy and super tasty. You can switch it up by adding some small chopped cherry tomatoes, chilli or garlic and it tastes delicious whatever way you choose to make it!
Super Tasty & Super Simple SalsaFinely chop the tomatoes and onion into small chunks retaining the juice. Place into a bowl. De-seed and finely chop the chilli’s (if you are adding them) and add to the bowl
